Brussels Sprouts with Caramelized Onions

Given how enamored we are with Brussels sprouts, we are happy to create new recipes to ensure we maintain this love affair for as long as possible. This version is based on the sweet and fragrant flavors of caramelized onions that when added create a slightly sweet flavor offset by the sea salt.

Ingredients: 
1lb (0.5 kg) Brussels sprouts
1 medium onion finely diced
3 tbsp extra virgin olive oil
¼ tsp sea salt
Cracked black pepper
Preparation: 

Cut all the Brussels sprouts in half so you have one flat surface per half. Preheat the oven to 400ºF (200ºC).

Place olive oil in a crock-pot on stove and heat, and then add finely diced onions and sauté until golden brown on medium heat for approximately 15 minutes, stirring to ensure all onions are evenly cooked.

Add the Brussels sprouts and sprinkle with sea salt and pepper, then cover with a lid and place in the oven for approximately 15 minutes, half way through toss them to ensure all sides are cooked evenly.

The sprouts should be tender on the outside and a little crunchy on the inside.
