Chicken With Bitter Oranges

This home-style recipe is a personal favourite comfort food: the recognizable flavours of sour oranges, slow-cooked, tender chicken meat and a ton of the interdit (forbidden) garlic.

Ingredients: 
1 chicken, cut in 8 pieces
3 heads of garlic, peeled
2 potatoes, cut in cubes
Juice of 8 bitter oranges (if not available, use the juice of 3 lemons and 4 oranges)
1 tbsp cracked pepper
1 tsp salt
Preparation: 

Rub the chicken well with salt and pepper. Put it in a pot (cast iron would be best) with the orange juice, garlic and potatoes and let it soak overnight in the fridge. Next day, cook on very low heat for at least 2 hours, until the chicken is well done and the sauce thickens.
