It is sometimes difficult to keep up with Philippe Conticini as he does not cease to make himself more and more discreet in order to come back each time with new, more surprising propositions. It was in Anvers that he became an expert in sugar, at Petrossian he tested the ground with savory products, in a micro-boutique in the Marais he focused on toffees, biscuits and cookies. Today he runs a local pâtisserie which revisits some of the old classics: tarte tatin, Paris-Brest, éclairs…and with such genius!
