Burnt Butter Biscuits May, 2010

Now just let me explain to anyone brought up in North Americans that this biscuit is what you would call a cookie. What you call a biscuit is, for us in Australia, a scone. This was a family recipe, both my aunts made them, but my mother’s rendition was the best.

Pomegranate Pistachio ‘Ferreros’ February, 2010

Given all that Ferrero Rochers meant to us then, I feel that it’s poetic justice to say “I love you” with my own interpretation of these nutty treats: pomegranate-pistachio “ferreros.” The pomegranate, or “anar” as we call it in India, is a symbol of love, fertility and prosperity, and its juice, flesh and seeds are ubiquitous in our cuisine. Ayurveda prescribes what may just be one of the simplest cures for the loss of sexual desire: pomegranate seeds.

Jane’s Killer Chocolate Cookies February, 2010

The key to these cookies is getting the batter on the baking tray very quickly after adding the melted chocolate, otherwise the chocolate starts to set.

Tip: Measure out all your ingredients before starting.

Almond Golden Raison Oatmeal Cookies with Cardamom November, 2009

These cookies are a twist on the classic American oatmeal raison cookie.  Chewy and hearty, they make for a perfect afternoon pick-me-up. I love the exotic combination of cardamom, vanilla and coconut oil combined with maple syrup.

 

Barbados Cream and Shortbread October, 2009

In the 50’s boat-loads of Bajuns came to the UK bringing exotic fruits, strange recipes and laughter with them. The cold, wet English climate must have been a shock to them and I like to think this recipe was a good winter warmer, not because it needs cooking, or has hot spices in it, but it looks warm and glossy. Our babysitter who was from Barbados gave me the recipe.
