Rustic Olive Oil Spelt Crackers
Even I don’t usually make my own crackers, so I completely understand skipping over this recipe, but don’t, it’s well worth the extra effort and your guests will love you for it!
Try making them with different toppings: sesame, poppy or caraway seeds all work well.
Pre heat oven to 400°F, if your oven has a confection setting use it, if not you may need to bake crackers a little longer.Line a baking sheet with parchment paper.
Combine flour, fine sea salt and black pepper to the bowl of a food processor and blend for about 10 second to evenly combine. While the motor is running pour in olive oil and water, turn food processor off when dough almost forms a ball. Transfer to a lightly floured surface and gently kneed a couple of times to bring dough together, it will be stiff and a little crumbly. Cut into 4 pieces and use a rolling pin to roll each quarter into strips about 5 inches by 15 inches, don’t turn or flip the dough. Use a thin spatula to gently lift the strip of dough onto baking sheet. Lightly brush with water, sprinkle with salt and black pepper and prick with a folk. Repeat with remaining dough and bake in batches (2 strips fit on each tray) for 6 minutes, rotate tray and bake another 5 to 6 minutes, crackers should be brown around the edges, remove from oven and gently lift each strip onto a wire rack. When completely cool break into 10 to 12 pieces.
