India

Masala Trails October, 2010

A few minutes ago, I watched a popular Asian chef attempt a fusion dish on his TV show. He topped a traditional Rajasthani millet porridge with caramelized guavas and white-truffle oil. The porridge and the guavas would have been interesting, but the truffle oil seemed over-the-top. The millet used was probably bajra, a poor man’s food, with a fairly strong nutty flavour of its own. It seemed a crime to combine them. It was almost like “When in doubt, throw in a truffle”!

Invitation to a Feast February, 2010

My youngest sister, Neha, married her high school sweetheart, Mohit, last December in a three-day-long celebration. More than an exchange of vows and rings, weddings in India are viewed as the union of two families and comprise a number of religious rituals witnessed by family deities, ancestors (in the form of photographs), extended family and friends. They are extravaganzas of colour, rich apparel, music and dancing at the centre of which is food!

Delhi on My Plate January, 2010

I had only ever passed through Delhi on my way to other places; I never actually stayed to discover it. But having decided to map India’s culinary experiences for Masala Trails, my new food-tourism venture, which will showcase Indian cuisine to travelers coming to India, last month I had the perfect excuse to stop and smell the, well, kebabs in Old Delhi en route to Rajasthan.
