The pleasures of eating in Delhi are many.  The northern soil and the influence of cuisines from central asia give the spices a special twist.  A fresh salad twangs with delight when the chat masala (a mix of roasted cumin, black rock salt,dried mango powder, dried pomegranate seed powder...) are squeezed in with lime juice!

Connaught Place in the heart of the city, designed around an architectural circle, is an office and shpping hub.  To feed its hungry people are hundreds of  meal makers, mostly a single man with his head basket that turns into a roadside cafe.  Some have mobile carts that can cook or heat on fire and create a slim table for a standing munching moving style cafe.  The chola kulcha stalls are most popular followed by the fresh fruit and salad chaats.
